Cilantro Lime Rice
Just a little spruce up to your standard rice. Every side dish needs a little pizazz here and there.
1 cup of dried brown rice
2 cups of water
2 tablespoons of lime juice
1 bunch of cilantro, chopped
1 tsp salt
1 tsp of extra virgin olive oil
In a pot, add rice, water and salt. Bring to a boil.
When most of the water evaporates, not all, reduce temperature to low and cover for about 20 minutes.
Shut off flame and let it sit covered for 5 more minutes.
In a bowl, combine, rice, cilantro, lime and oil. Serve with anything! Seriously or just eat alone. So good.
