Classic Corn Bread
Corn bread. That’s all I have to say. It’s good. It’s a one bowl recipe. It never lets you down. Let’s just get to it!
1 1/2 cups of coconut milk
1 TBSP of white vinegar
2 large eggs
1/2 cup of coconut sugar
1 TBSP honey
1 cup GF flour ( I use Bob Redmills 1 to 1)
1 1/2 cup gluten free cornmeal
2 tsp of baking powder
1/2 tsp of baking soda
1 tsp of salt
1/2 cup of melted vegan butter
Add milk and vinegar in a bowl and set aside for 5 - 10 minutes.
Preheat oven to 425 and grease a 9x9 pan
Beat eggs, sugar and honey
Add flour, cornmeal, powder, soda, salt and mix together
Pour in melted butter and “buttermilk” until all combined. Mix.
Pour into pan
Bake for 20 - 25 minutes.
toothpick test that bitch. When it's good...eat! Woohoo!
