Cucumber Avocado Gazpacho
There are some gazpachos we make and there are others we share with you. This one we are sharing. Again, great simple soup for the summer. I love avocados and I love soup so put those together and we have a gazpacho. Not sure that that is how it works but at least you will have a recipe for those warm days. Personally, I can eat hot soup on warm days but I run cold so to each their own.
2 medium cucumbers, roughly chopped
3 garlic cloves
2 ripe avocados
1/2 cup of water
3 TBSP lime juice
2 TBSP olive oil
In a heated pan with a touch of olive oil, saute garlic with shallots until slightly crisp
Add cucumber and saute for 1 -2 minutes and then turn off heat.
Once cooled, add avocado in a bowl with sauteed veggies, the remaining olive oil, lime juice and 1/2 cup of water.
Puree all together, then cool....GAZPACHO!!
