Lemon Blueberry Swirl Bars

Ingredients
- SHORT BREAD for Lemon Bars + Blueberry
- 1 cup vegan Butter (2 sticks melted)
- 1/2 cup gran sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 2 cups of flour
- LEMON FILLING
- 6 large eggs
- 2 cups gran sugar
- 1 cup lemon Juice
- 1/2 tsp Vanilla
- 1/2 cup of flour
- Whisk together
- BLUE JAM
- 12oz Fresh Blueberries
- 1/2 cup Gran sugar
- 1 tablespoon -lemon Juice
- 1tsp Vanilla
- 1/2 tablespoon Cornstarch
Directions
Instructions Short Bread:
- Preheat Oven 350 degrees
- Grease 9x13 pan with parchment paper
- Press down
- Bake 20-22mins
Instruction Lemon Filling:
Whisk all ingredients together.
Instructions Blue Jam:
Cook on low heat in a saucepan over stove for 15mins
- Smush some - NOT ALL
- Allow to cool completely
- Pour over baked shortbread
- Let’s put it together.
- Pour lemon filling over baked shortbread
- With a spoon add blueberry jam to pan.
- With a toothpick swirl the blueberry jam throughout the lemon filling.
- Bake 25- 30mins until NO JIGGLE
- Room temp 1 hour
- Leave in fridge for 2 hrs/freezer 1 hr
- Cut in squares
- Powdered sugar when serving
