Watercress soup— light, fresh, and full of benefits:

Ingredients

2 bunches of watercress (best in Spring time)

1 cup of yellow onion

1 bunch of green onions
-
½ sticks of vegan butter
-
4 cups of vegetable broth
-
½ tsp salt
-
¼ tsp pepper
Directions
Melt Butter in saucepan
- Add onions and green onions and saute for 1 -2 minutes
- Add watercress 3 -4 minutes
- Add salt, pepper, bouillon, 1 -2 minutes
- Add water, simmer for 30 minutes
- Blend with immersion blender
